This chapter provides an extensive review of the physics of lipid self-assembly in water and the emergence of lipid micelles, lipid bilayers, and lipid vesicles. It describes the trans-bilayer and lateral structure of lipid bilayers and discusses them in relation to protein and enzyme function. The chapter demonstrates the use of dissipative particle dynamics (DPD) to simulate lipid self-assembly and shows how this technique produces micelles, tubular filaments, bilayers, and closed vesicles.Less
